Rogan Josh Lamb Recipe:
700g boneless lamb, cut into bite-sized pieces
2 large onions, finely chopped
3 tablespoons ghee
2 teaspoons ginger paste
2 teaspoons garlic paste
1 cup plain yoghurt
2 tablespoons Rogan Josh spice blend (or make your own with a mix of ground cumin, coriander, cardamom, cinnamon, and paprika)
1 teaspoon ground turmeric
1 teaspoon chilli powder (adjust to your spice preference)
Salt to taste
1 cup tomato puree
1/2 cup water
Fresh cilantro leaves for garnish
Instructions:
Heat the ghee in a large, heavy-bottomed pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
Add the ginger and garlic paste and continue to sauté for a couple of minutes until the raw aroma disappears.
Stir in the Rogan Josh spice blend, ground turmeric, and chilli powder. Cook for another 2-3 minutes, stirring constantly to prevent burning.
Reduce the heat to low and add the yoghurt, one tablespoon at a time, stirring well after each addition. This prevents the yoghurt from curdling.
Add the lamb pieces to the pan and brown them on all sides, ensuring they are well-coated with the spice mixture.
Pour in the tomato puree and water, stirring to combine. Season with salt to taste.
Cover the pan and simmer on low heat for about 1.5 to 2 hours, or until the lamb becomes tender and the oil begins to separate from the sauce.
If the sauce becomes too thick, you can add a little more water during the cooking process.
Once the lamb is tender, garnish with fresh cilantro leaves.
Serve your Rogan Josh lamb hot with steamed rice or naan bread for a delicious and authentic Indian meal.
