- 600g pumpkin, cut into 3 cm cubes
- 2 tablespoons sour cream
- 2 tablespoons finely chopped fresh coriander
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large, deep non-stick frying pan over medium-high heat.
- Add the cubed pumpkin and cook for 5 minutes, stirring occasionally, until golden.
- Pour in the entire jar of Tully’z All-Natural Rogan Josh Curry Sauce, cover, and cook for another 5 minutes or until the pumpkin is tender.
- Remove the lid and stir in the sour cream and fresh coriander.
- Serve hot with naan, rice, or roti.
