Ingredients

- 3 x 250g packets of Microwaveable rice of your choice (or 5 cups cooked rice)
- 1 Jar Tully'z All-Natural Rogan Josh Curry Sauce
- 1 can of drained and rinsed chickpeas
- 100g or 1 cup Green peas (fresh or frozen)
- 200g or 2 cups diced chicken or Mushrooms or Tofu (2cm cubes)
- 25g or 1/4 cup roughly chopped unsalted cashews (optional) 15g or 1/4 cup finely chopped fresh coriander
- 2 tbsp olive oil
Method
- Microwave the rice as per packet interactions and keep warm.
- Heat oil in a large non-stick frying pan or pot.
- Add in the chicken or tofu, veggies, and chickpeas & pan-fry on med- low heat until the chicken is cooked.
- Stir in the whole jar of Tully'z all-natural curry sauce, cover & cook for 5 minutes on medium heat.
- Open lid and mix in the cooked rice, freshly chopped coriander, and cashews.
