Vegan Meatloaf
INGREDIENTS
  • 160 gms carrots (diced in 2 cms discs)
  • 160 gms button mushrooms (whole)
  • 100 gms onion (roughly diced in 3-4 cms cubes)
  • 2 cans young jackfruit (drained)
  • 2 tsp mustard powder
  • 2 tsp onion powder
  • 2 tsp paprika (smoked/sweet)
  • 2 tbsp soy sauce
  • Spray Oil
METHOD
  • Preheat the oven on 180C/350F
  • Line a baking tray with aluminum foil and spray some oil. Place all the vegetables, sprinkle the spices on top and drizzle the soy sauce.
  • Bake for 30 minutes and keep aside to let it cool a little. Turn the heat down to 175C/345F, and leave the oven on, we will need it later.
  • Once the vegetables are cooled, blend using a food processor and keep aside. Do not blend them too fine.

INGREDIENTS FOR THE GLAZE

  • 3 tbsp tomato sauce
  • 2 tbsp molasses
  • 1 Tbsp water

*Mix well and keep aside.

**Or you can mix in 5 Tbsp of BBQ sauce with water and use it as glaze.

REMAINING INGREDIENTS

  • 120 gms rolled oats
  • 200 gms walnuts
  • 2-1/2 tbsp tomato sauce (Heinz is vegan)
  • 2 tbsp nutritional yeast
  • 2 tbsp rice crumbs

METHOD

  • Blend oats, walnuts, and nutritional yeast in a blender/food processor.
  • Add in the blended vegetables, tomato sauce, and rice crumbs. Mix well using hands or wooden spoon.*
  • Line a bread tin with baking paper, and fill it with the mixture. Make sure the baking paper is hanging over the sides, it makes it easier to lift out the whole meatloaf when baked. Flatten the top using a spatula.
  • Evenly spread half the glaze on top, and put in the oven for 40-45 min. Its should be firm to touch.
  • At the halfway mark, take it out and baste it with the remaining glaze.
  • Let it cool a little before you take it out and slice it. Clean the knife and dip it in the water after each time you cut a slice. This will help in achieving neat looking slices.
  • Enjoy with vegan coleslaw on the side.

*The consistency should be like ‘meatball’ mixture. Adding the tomato sauce and breadcrumbs at this time gives your more control. You can add more or less as needed.

**Some tomato Ketchup/BBQ sauce brands may have gluten, do check the nutritional info.

***I used few drops of red food color to achieve the “meaty” color. You can use food color or 1 tbsp of beetroot juice. This step is optional.
